Prep time: 10-12 minutes, Cook time: 1 hour, 5 minutes. Serve with brown or white rice, lettuce salad with a slice each of orange and red onion, and vinaigrette.

Recipe Ingredients for Chicken Cacciatore

1 lb. chicken breast, boneless and skinless
1 c onion, chopped
1/2 c green pepper, chopped
1/2 c celery, chopped
28 oz chopped stewed tomatoes
1/2 c water, divided
1 clove garlic
1 T fresh parsley, minced
2 t fresh oregano, minced
1 T cornstarch

Recipe Directions for Chicken Cacciatore

  1. In skillet sprayed with nonstick cooking spray, brown chicken pieces on both sides over medium high heat for a total of 5-6 minutes.

  2. Add onion, green pepper, tomatoes, 1/4 cup water, and garlic. Stir well. Reduce heat, cover, and simmer 1 hour. Check after 25 minutes and add more water if needed.

  3. Add herbs. Mix cornstarch with remaining 1/4 cup water and add to skillet. Stir until sauce thickens, about 2-3 minutes.
