Chicken in a spicy tomato and mushroom sauce

Recipe Ingredients for Chicken Cacciatore

1 lb chicken breast
2 cloves garlic, chopped
2 large tomatoes, peeled and chopped
1 tbsp olive oil, divided
1 tsp oregano
1 c sliced mushrooms
1 tbsp red onion, chopped

Recipe Directions for Chicken Cacciatore

  1. Cut chicken into chunks. Sprinkle with salt and pepper, and saute in olive oil in a nonstick frying pan. Remove to paper towel to drain.

  2. Add the rest of the olive oil to the pan and saute garlic 30 min.

  3. Add onion and mushrooms, and saute until soft.

  4. Stir in tomatoes and oregano; simmer for 10 minutes.

  5. Add chicken to pan. Cover and simmer slowly for 20 minutes.

  6. Serve over rice or pasta.
