Chicken Cacciatore over whole wheat pasta

Recipe Ingredients for Chicken Cacciatore

1 1/2 lbs boneless, skinless chicken breasts
1 medium onion, chopped
1 medium red bell pepper, sliced
4 cloves of garlic, finely chopped
28 oz tomatoes, diced w/juice
1/2 tbsp extra virgin olive oil
1 1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp dried thyme
1/3 tsp salt
1/4 tsp black pepper
1 tsp cornstarch
1 1/2 lbs whole wheat spaghetti

Recipe Directions for Chicken Cacciatore

  1. Cut raw chicken into chunks approximately 1.5" square.

  2. Heat oil in non-stick frypan and add chicken pieces.

  3. Cook until all sides have changed colour.

  4. Add onions, pepper slices and garlic. Saute until onions become transparent.

  5. Add the entire can of tomatoes and salt, pepper, oregano, basil and thyme and bring to a boil.

  6. Let simmer covered for 15 minutes and then uncover and simmer for 15 minutes more to reduce the liquid.

  7. Add the cornstarch to 2 tbsp of cold water and stir into chicken mixture until liquid thickens.

  8. In a seperate medium sized pot, fill 3/4 with hot water and bring to a boil.

  9. When boil is reached, add pasta and cook until desired doneness is reached. About 8-10 minutes
