Recipe Ingredients for Chicken Cacciatore

2 lbs. chicken thighs
1 tbs. vegetable oil
1 lbs. mushrooms, quartered
1 onion, chopped fine
4 cloves garlic, minced
2 tsp. oregano, dried
1/2 tsp. red pepper flakes
1/4 cup tomato paste
28 oz. tomatoes, diced
1/2 cup Red Wine
1/4 oz. porcini mushrooms, dried
3 lbs. chicken breasts, bone in split, skin discarded
1/4 cup basil, chopped fresh
1 tbs. red wine vinegar

Recipe Directions for Chicken Cacciatore

  1. Season thighs with salt and pepper. Add to large skillet over med high heat for about 5 minutes per side. let cool 5 minutes and discard skin and transfer to slow cooker.

  2. Discard all but 1 Tbs grease from skillet. Cook mushrooms, onion, and .25 tsp. salt over medium heat until golden brown, about 10 minutes. Stir in garlic, oregano, and pepper flakes and cook until fragrant about 30 sec. Transfer to slow cooker.

  3. Add tomato paste and .5 of diced tomatoes to pan and cook until deep red and dry about 3 minutes. Stir in red wine and porcini and simmer until liquid is thickened, about 2 minutes. Transfer mixture to food processor process until smooth. Transfer 1/3 cup to slow cooker.

  4. Place chicken breasts on large piece of aluminum foil. Spoon remaining tomato mixture over breasts. Fold foil over chicken crimping edges and place in slow cooker. Cover and cook on low until chicken is tender and cooked through about 4 hours.

  5. Remove chicken to platter, put all remaining juices from packet back into cooker. Stir in remaining tomatoes, basil, and vinegar into sauce. Spoon over chicken and serve.
