Chicken in a tomato/wine sauce with onions, peppers

Recipe Ingredients for Chicken Cacciatore

1 tbsp. olive oil
3 lb. chicken thighs, without skin
15 oz. tomato sauce
1/2 c. wine, red
2 tsp. garlic salt
3/4 tsp. basil
1/4 tsp. pepper
6 medium onions, peeled, quartered
2 large green peppers, cut into 1/2" strips

Recipe Directions for Chicken Cacciatore

  1. In 12" skillet over medium-high heat, in hot olive oil, cook the chicken pieces until well browned on all sides. Drain extra grease.

  2. Stir in tomatoes with their liquid, wine, garlic salt, basil, and pepper; heat to boiling. Reduce heat to low; cover and simmer 15 minutes.

  3. Add onions and green peppers; cover and simmer 30 minutes longer or just until vegetables are fork-tender.

  4. Serve with rice.
