Recipe Ingredients for Chicken Cacciatore

8 ounces chicken thigh, boned, skinned, and chopped
12 ounces rotini
8 ounces onion
3 cloves garlic
8 ounces mushrooms
1 tsp thyme
1 tsp bay leaf
1 tbsp juniper berries (optional)
4 ounces chicken broth
2 pounds tomatoes
1/4 cup parsley
1 tbsp fresh basil

Recipe Directions for Chicken Cacciatore

  1. Turn the heat to medium and wait a minute or so, until the pan is hot. Add the onion, mushrooms, thyme, garlic, juniper berries, and bay leaves and cook, stirring occasionally, until the onion softens, about 10 minutes. Add the chicken and cook until just browned. Add the stock, then the tomatoes along with any accumulated juices. Stir, then partially cover the pan; reduce the heat to low and cook about 10 minutes, or until the chicken is cooked through.

  2. Meanwhile, cook the pasta according to package directions.

  3. Garnish with parsley and basil and serve over cooked pasta.
