My mom's chicken cacciatore recipe. More of a concept, reallly.

Recipe Ingredients for Chicken Cacciatore

6 thigh, bone and skin removed Chicken, Thigh, Meat Only
1 tbsp Olive Oil
1 medium Pepper, Sweet, Red
1 medium (2-1/2" dia) Onions
4 clove Garlic
1 1/2 cup, diced Mushrooms, Portabella
14 oz Tomatoes
1/2 box Spaghetti Dry

Recipe Directions for Chicken Cacciatore

  1. Add the oil to a large saucepan. Brown vegetables quickly on a high heat until they are 2/3 done.

  2. Add half of the garlic.

  3. Add the tomatoes.

  4. Cover and cook for ten minutes.

  5. Remove from pan

  6. Brown the chicken with the rest of the garlic.

  7. When chicken is halfway cooked, put vegetables back in and cover and cook until chicken is done.

  8. Serve on top of pasta.
