Makes 8 servings



Generous portion of a flan with a low calorie count. This is seasoned with Curry and Coriander but you could season with anything you like.

Recipe Ingredients for Chicken and Cabbage Flan

2 eggs
3/4 cup Egg substitute
2 cups 2% milk
1 1/2 tsp. curry powder
1/2 tsp coriander
1 tsp salt and pepper
1/2 red onion, chopped and blanched
1/3 head cabbage, shredded and blanched
5 oz chicken breast, grilled and shredded

Recipe Directions for Chicken and Cabbage Flan

  1. combine the eggs, egg substitue, curry, coriander and salt and pepper. Put the onion, cabbage and chicken breast in a 9x3" tall ceramic souffle pan. Pour over the custard and place in a 350° oven for about 45-50 minutes until set in the middle.

  2. Cool for 10 minutes before cutting.
