Recipe Ingredients for Chicken Butternut Quinoa stew

1 1/2 lb. butternut squash
3 1/2 cups Broth Chicken Reduced Sodium
1 1/2 lb. boneless, skinless chicken thighs
1 tbsp olive oil
1 medium yellow onion, finely chopped
4 cloves garlic, minced
1 1/2 tsp dried oregano
14 oz no salt added petite diced tomatoes
2/3 cup uncooked quinoa
1 Freshly ground black pepper, to taste
1/4 cup minced fresh flat-leaf parsley

Recipe Directions for Chicken Butternut Quinoa stew

  1. Steam squash 10 mins till barely tender. Remove 1/2 squash and set aside. Continue to cook the remaining squash till very tender and mash.

  2. Bring chicken broth to a boil, add chicken and cook 15 mins. Remove chicken from pan and let cool.

  3. Meanwhile, brown onion and garlic in olive oil. Once soft, add to broth with remaining ingredients. simmer 15 mins. Add shredded chicken and heat through.
