Recipe Ingredients for Chicken Butternut Curry with Red Lentils

1 T avocado oil
1 1/4 lb butternut squash, peeled, seeded and cut into 2-inch chunks
1/2 large yellow onion, diced
1 1/2 oz red pepper, chopped
14 oz cauliflower, florets
13 ounces coconut milk, light
3 cup low-sodium chicken or vegetable broth
1 3/4 lb chicken breast, cubed
1 cup red lentils
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 t ginger
1/2 t curry powder
1/2 t turmeric
1/4 teaspoon cinnamon
1/2 teaspoon salt
1 Fresh ground black pepper to taste
1 cup apple, diced
6 T plain yogurt

Recipe Directions for Chicken Butternut Curry with Red Lentils

  1. In a large cast-iron pot or Dutch oven, add the oil and saute the squash and onion about 10 minutes over medium-high heat until lightly browned and semi-soft. Add chicken. Brown.

  2. Add the coconut milk, broth, lentils, spices, salt and pepper.

  3. Lower heat and simmer for about 20 to 25 minutes, stirring occasionally. Add in apples with 10 minutes cooking time left.

  4. Garnish with extra diced apple and a tiny dollop of crème fraîche or plain yogurt if desired.
