Chicken breast, brown rice and summer veggies with a light balsamic and lemon dressing.

Recipe Ingredients for Chicken and Brown Rice Salad

4 cups brown rice
2 cucumbers
1/4 red onion
2/3 cup corn kernels
1/2 cup peas
5 cups chicken breast
3 cups cherry tomatoes
4 oz goat cheese
4 tbsp olive oil
1/2 cup balsamic vinegar
1/4 cup minced parsley
1 tsp black pepper
4 tbsp lemon zest
1/2 cup lemon juice

Recipe Directions for Chicken and Brown Rice Salad

  1. Cook rice according to directions. Let cool.

  2. Poach chicken breasts in liquid of garlic powder, italian seasonings and bay leaf. Let cool.

  3. Chop all veggies into small bites and mince herbs.

  4. Mix olive oil, balsamic, lemon juice, zest and black pepper in a large bowl.

  5. Add all veggies, chicken and rice and toss well.

  6. Serve at room temperature or chilled.

  7. Crumble goat cheese on top.
