Chicken thighs, brown rice, cream of mushroom soup and lots of veggies. Adapted from a Campbells recipe that called for cream of chicken soup.

Recipe Ingredients for Chicken and brown rice casserole

1 9/10 lb chicken thigh
26 oz healthy request cream of mushroom soup
1/2 c pepper
1 cup dry brown rice
16 oz green beans
1 1/2 c frozen peas
1 c water

Recipe Directions for Chicken and brown rice casserole

  1. Mix together all ingredients except chicken in deep dish covered baker.

  2. Top with chicken.

  3. Season to taste.

  4. Cook at 375 for 50-60 minutes. Divide into 6 servings and freeze what will not be eaten in the next day or two.
