Great meal after a hard workout. Very filling and loaded with protein.

Recipe Ingredients for chicken and brown rice casserole

3 cups chicken, cooked and cubed
1 cup uncooked long grain brown rice, cooked
1/4 cup butter
1 cup diced onion
1 cup chopped celery
1 1/4 cups milk
3 eggs, beaten
1 1/2 teaspoons salt (optional)
1/3 cup grated parmesan cheese
2 cups shredded cheese, fiesta blend

Recipe Directions for chicken and brown rice casserole

  1. Melt butter into hot, cooked rice.

  2. Blend all ingredients in large mixing bowl. Transfer to 13x10 baking dish. Cook for 45 minutes at 350 degrees.
