Makes 8 servings



Foolproof and almost fat free. By using the Italian styled tomatoes I eliminate the need to add spices/herbs because the tomatoes are already spiced. You can add/alternate the vegetables to your own taste.

Recipe Ingredients for Chicken, Brocolli, Carrots & Pasta Casserole

2 cups Rotini (Catelli Smart Pasta)
2 breasts, chicken, breast, skinless/boneless, meat only (makes 8 fillets)
1/4 cup Fat Free Italian dressing (Kraft Fat Free Italian Dressing)
1 cup brocolli, pieces
1 cup carrots, sliced
2 cups mozzarella cheese, part skimmed, shredded
3 cups stewed tomatoes, puree (2 cans Aylmer Italian Styled Stewed Tomatoes)

Recipe Directions for Chicken, Brocolli, Carrots & Pasta Casserole

  1. Fillet Chicken into 8 pieces

  2. Cook pasta (Al Dente), Chicken Fillets (marinated in the italian dressing, grilled or baked) and carrots (boil, steam, microwave). You really don't need to pre-cook the broccoli, just cut the tops off and break into small florets.

  3. Combine Pasta, vegetables & 1/2 tomatoes (puree) in casserole dish (1/2 full). Use 2 casserole dishes if necessary.

  4. Lay chicken on top.

  5. Pour the remaining tomatoes over each casserole

  6. Spread mozzarella cheese over each casserole

  7. Bake, covered, for 1/2 hour or until top browns to your liking. Remember everything is already cooked, you're only baking it to infuse all the flavours/ingredients together and brown the cheese so you can't really under cook this casserole.
