Recipe Ingredients for Chicken Broccoli Stirfry

1/4 cup chicken broth
3 tbsp soy sauce
1 tsp rice wine vinegar
1/4 tsp red pepper flakes
2 tsp cornstarch
2 tbsp vegetable oil
1 pound boneless skinless chicken breast
3 cloves garlic
1 tsp dried ginger
3 cups broccoli
1 carrot cut into thin strips

Recipe Directions for Chicken Broccoli Stirfry

  1. Cook pasta or rice and keep warm while setting aside.

  2. Combine broth, soy, vinegar, pepper and cornstarch in a bowl. Heat a wok or heavy skillet over high heat.

  3. When very hot, add 1 tbsp oil. Add chicken and stir-fry until lightly browned, about 2 minutes. Remove from wok and set aside.

  4. Add remaining oil, garlic, and ginger; stir-fry 30 seconds. Add broccoli and carrot; stir-fry 2 minutes. Add soy mixture and chicken, stir well, and cover. Lower heat to medium and simmer until vegetables are tender, about 3 minutes. Serve over pasta or rice.
