Recipe Ingredients for Chicken-Broccoli Stir Fry

812 grams Chicken Breast, meat only, cooked fried
8 tsp peanut oil
9 tbsp soy sauce
932 grams broccoli
92 grams corn, canned
4 oz mushrooms, chopped
56 grams water chestnuts, canned
136 grams carrots, slice in thin narrow strips
1 tbsp cornstarch
2 tbsp garlic, minced
1 leek, sliced thin

Recipe Directions for Chicken-Broccoli Stir Fry

  1. Defrost chicken breasts and slice in thin narrow strips. In a glass bowl, add 2 tsp peanut oil, 2 tbsp soy sauce, half the minced garlic, ginger (to taste), black pepper (to taste). Sit aside to marinate - stir occasionally.

  2. Prepare veggies. Preboil broccoli and carrots just until tender (not soft).

  3. Add 2 tbsp peanut oil to wok and heat till smoking. Add corn, half the minced garlic, 2 tbsp soy sauce and mushrooms and stir-fry till cooked. Remove from pan.

  4. Add 2 tbsp peanut oil to wok and add carrots, water chestnuts and 2 tbsp soy sauce. Stir-fry till cooked. Remove from pan.

  5. Add 2 tbsp peanut oil to wok and add leek, brocolli and 2 tbsp soy sauce. Stir-fry till cooked. Remove from pan.

  6. Add 2-3 tbsp peanut oil to wok and add chicken. Stir-fry till cooked. In a small jar, add cornstarch to approx 1 cup water and shake till well mixed. Add to the chicken and stir. Return all veggies to the wok and stir-fry till all heated through. Add extra seasonings (soy sauce or ginger) to taste.
