Recipe Ingredients for Chicken, broccoli, spinach stir fry

1 1/2 cups fat free chicken broth
2 tablespoons hoisin sauce
1 tablespoon grapeseed oil
1 pound boneless skinless chicken breast
1 pound broccoli floret
6 cups spinach leaves
113 1/2 g water chestnuts
2 teaspoons sesame seed oil
1 tablespoon water
1 tablespoon cornstarch

Recipe Directions for Chicken, broccoli, spinach stir fry

  1. heat grapeseed oil in cast iron skillet, add chicken breasts, season with salt & pepper, cook through

  2. meanwhile, cook broccoli florets in saucepan or microwave until crisp-tender

  3. when chicken is cooked, cut into bite size pieces and return to skillet over low heat

  4. mix hoisin sauce & chicken broth & pour over chicken in skillet

  5. add broccoli & spinach

  6. stir fry over med-low heat until spinach is wilted

  7. add 1 small can water chestnuts & sesame oil

  8. mix 1 T water with 1 T cornstarch & add to skillet

  9. cook just until thickened

  10. serve with brown rice
