From Weight Watchers cookbook. Input the pasta separately - can use whole wheat penne, rontini, elbow, etc. Sprinkle finished plates with a little grated parmesan or asiago cheese.

Recipe Ingredients for Chicken & Broccoli Saute with Pasta

4 tablespoons peanut oil
3 cloves garlic, minced
1/2 lb chicken breast, split in 4 strips
2 cups broccoli
1 tsp dried basil
1/4 tsp sea salt
1/8 tsp black pepper

Recipe Directions for Chicken & Broccoli Saute with Pasta

  1. Bring water to boil and cook pasta to al dente. Reserve about 1 cup of liquid and drain pasta. Set aside.

  2. Meanwhile in a large skillet, heat oil on medium-high until beginning to pop.

  3. Salt and pepper chicken pieces then carefully place in skillet. Saute, turning once or twice to sear outside about 3-5 minutes each side depending on thickness of breast. Cover skillet if desired.

  4. Remove chicken from pan to a plate and keep warm.

  5. While skillet is still hot, add garlic and saute until fragrant, about 30 seconds, scraping up any browned bits.

  6. Add broccoli and basil, saute 2-3 minutes or until broccoli is crisp tender.

  7. Reduce heat and add pasta to pan. Add some of the reserved water just to moisten. Saute until heated through.

  8. Serve chicken over pasta/broccoli mix.
