Recipe Ingredients for Chicken and Broccoli Pockets

6 oz. chicken breast
6 oz. broccoli
2 oz. cheddar cheese
1 1/2 oz. jarlsberg cheese
6 tortillas, whole wheat

Recipe Directions for Chicken and Broccoli Pockets

  1. Season chicken with salt and pepper. Coat skillet with cooking spray. Add chicken and cook until brown and juices run clear. Let cool. Coarsely chop; transfer to medium bowl. Set aside. Alternately, use pre-cooked chicken strips and coarsely chop.

  2. Preheat oven to 400 degrees. Bring 1-1/2 inches of water to a boil in a small saucepan fitted with the steamer insert. Add broccoli; cover. Cook until just tender, 2-3 minutes. Transfer to a plate; let cool. Coarsely chop; add to chicken in bowl. Add cheeses; season with salt and pepper. Toss well.

  3. Place a packed 1/2 cup of chicken mixture in center of each tortilla; shape filling into an oval. Fold in right and left sides of tortilla about 1/2 inch; tightly roll up.

  4. Place pockets, seam side down, on a lightly oiled baking sheet. Bake until crisp and beginning to turn golden, about 12 minutes. Cut in half crosswise.
