Strips of sauteed chicken and broccoli with a thai peanut sauce

Recipe Ingredients for Chicken & Broccoli with Peanut Sauce

2 c sliced chicken
1 1/2 c rice
2 c broccoli florets
6 oz water chestnuts
6 T peanut butter
1 t honey
1/2 c milk, 1/2 c water
1 T chili powder

Recipe Directions for Chicken & Broccoli with Peanut Sauce

  1. Cook rice. Start double boiler and add peanut butter, honey, chili powder when these begin to soften, gradually whisk in milk and water. Add more water if it is too thick. Saute chicken, when chicken is almost cooked add broccoli florets and cook until bright green, but not overdone. Add garlic, montreal steak seasoning or chili powder if desired.

  2. Serve over cooked rice and top with peanut sauce.
