A light creamy sauce with chicken and broccoli. Serve over whole grain pasta. Also good mixed with the pasta, topped with cheese, and baked.

Recipe Ingredients for Chicken Broccoli Pasta Sauce

4 tsp olive oil
2 tsp minced garlic
12 oz boneless, skinless chicken breast, sliced
3 cups broccoli florets
1/4 cup no salt added chicken broth
1 1/2 cups nonfat milk
2 tbsp cornstarch
1/4 tsp crushed red pepper
1 tsp garlic powder
1/2 tsp black pepper
1/4 tsp salt
1 1/2 oz pecorino romano cheese

Recipe Directions for Chicken Broccoli Pasta Sauce

  1. Heat a non-stick pan over medium heat. Add the olive oil and garlic, and saute for about a minute.

  2. Add the chicken and saute until cooked through, turning as necessary until it is browned on all sides. Remove chicken to a bowl.

  3. Deglaze the pan with the chicken broth, increase heat to medium high, bring to a simmer, add the broccoli florets, cover and steam until bright green in color. Remove broccoli from pan and add to the chicken in the bowl.

  4. Whisk the cornstarch into the milk, add to the pan, and cook until thick. Add the garlic powder, crushed red pepper, pepper, and salt. Taste to see if you want more heat, more pepper or more garlic powder (don't add more salt now...we're still going to add the salty cheese.)

  5. Turn off heat. Stir in the cheese and let it melt. Add in the broccoli and chicken. Taste, adding a touch of additional salt if necessary.

  6. Note: When you cook whatever pasta you are serving this with, save some of the pasta water. If this gets too thick, thin it with a bit of the pasta water.
