Use up that leftover chicken in the fridge.

Recipe Ingredients for Chicken and broccoli with mushroom sauce

6 oz chicken, leftover roasted
4 oz chicken broth
2 T wheat flour
2 T fat free sour cream
4 oz mushrooms
2 c cooked broccoli
1 tsp chopped garlic
1/2 t basil
1/2 t onion flakes
1 pinch parsley (big pinch)
1 salt and pepper to taste
1 cooking spray, olive oil

Recipe Directions for Chicken and broccoli with mushroom sauce

  1. Steam broccoli until desired tenderness.

  2. Spray skillet or 2 quart pan bottom with olive oil cooking spray.

  3. Add garlic, onion flakes, herbs, flour and 2 T of chicken broth.

  4. Cook over low heat stirring constantly for a minute or two.

  5. Slowly add remaining chicken broth while stirring.

  6. Add mushrooms and cook until desired tenderness.

  7. Add sour cream and mix thoroughly.

  8. Either pour mushroom sauce over warmed-up, leftover chicken and broccoli or do like I did and just mix it all together in the pan.
