Chicken, Broccoli, Mushroom Alfredo

Recipe Ingredients for Chicken, Broccoli, Mushroom Alfredo

13 1/4 oz linguine
162 g broccoli
2 tbsp olive oil
463 g grilled chicken breast
10 3/4 oz cream of mushroom
1/2 c fat free milk
1/2 c Parmesan cheese
195 g yellow onion, chopped
120 g crimini mushrooms

Recipe Directions for Chicken, Broccoli, Mushroom Alfredo

  1. Prepare linguine according to package directions, adding chopped broccoli during last 4 minutes of cooking.

  2. Toss chicken with 1 tablespoon olive oil, ground black pepper and chipotle pepper to taste. Grill.

  3. Meanwhile, saute mushroom and onions in a small skillet with 1 tablespoon oil.

  4. Drain pasta and broccoli, holding in colander. In the pot you cooked the pasta in, combine soup, milk, cheese and bring to a bubble. Add chicken, mushrooms, onions, and pasta to the pot. Stir. Serve.
