I grew up with this recipe and have made variations of it throughout the years. Spices are the real key to keeping this lower in fat. This is also a great leftover for lunch. It is sincerely one of my favorites... enjoy!

Recipe Ingredients for Chicken, Broccoli, and Linguine

1 lb linguine, cooked, drained
1 lb chicken breast, cubed, bite size
5 cups chopped broccoli
2 tbsp Olive Oil
2 tbsp Garlic, minced (pre-jarred minced or chopped garlic works the best for this, do not use dried)
2 tbsp Oregano, Fresh, chopped fine
2 tbsp Basil, Fresh, chopped fine
2 tsp Thyme leaves (not stems), Fresh, chopped fine (if you don't have fresh thyme, leave it out of the recipe, dried thyme will not w
1/2 cup I can't believe it's not butter spray

Recipe Directions for Chicken, Broccoli, and Linguine

  1. Start by cooking the linguine according to package instructions, drain and put aside.

  2. In a large skillet, heated at medium to medium high heat, add olive oil and spices and stir until garlic is golden.

  3. Add cubed chicken and continuously stir until chicken is cooked (do not wait for chicken to get crispy).

  4. Stir in Broccoli, reduce heat to medium-low, and cover. Stir frequently until broccoli is tender (fresh broccoli tastes the best with this meal).

  5. Add linguine to pan and combine well. Reduce heat to low at this point so the pasta does not stick.

  6. Add I can't believe it's not butter spray and combine until well mixed.

  7. Stir until margarine is heated and pasta is coated.

  8. Serve.
