A packed pasta dish for under 500 calories per serving

Recipe Ingredients for Chicken and broccoli linguine

3/4 lb whole wheat pasta
3/4 lb boneless chicken breast (tenders work great)
1/2 teaspoon red pepper flakes
1/2 cup chopped bell peppers
1 cup broccoli
1/2 tablespoon minced fresh garlic
1 tablespoon chopped fresh parsley
1/2 teaspoon crumbled dry sage
1/4 cup chopped onions
1/2 cup milk
1/2 tbsp butter
1/8 cup chicken broth
1/8 cup white wine
1/4 cup grated Parmesan cheese
1 tablespoons olive oil
4 oz mushrooms

Recipe Directions for Chicken and broccoli linguine

  1. cook pasta per package directions.

  2. heat olive oil in a large pan on med-high.

  3. season chicken with pepper and paprika(I also use salt-free garlic and herb seasoning).

  4. pan fry the chicken until fully cooked(about 5 min per side).

  5. remove from pan and shred the meat using two forks, set aside.

  6. add wine to the pan to deglaze.

  7. add onions, peppers, and garlic to the pan.

  8. saute until soft-about 5 min.

  9. add butter, broccoli and mushrooms-cook about 2 more minutes.

  10. Add red pepper flakes and sage and stir in with the veggies.

  11. Once combined, then add the chicken broth and milk.

  12. Stir and allow to come back to a boil.

  13. Add parmesan cheese and continue to whisk this mixture until cheese is completely absorbed into the milk.

  14. Add parsley and turn off the heat.

  15. Stir and then allow to sit for 5 minutes before serving.

  16. To serve: place 1/5 of pasta on plate, then a layer of the shredded chicken, and top with the veggies and sauce.
