Chicken with Broccoli and Garlic Sauce

Recipe Ingredients for Chicken with Broccoli and Garlic Sauce

2 tsp olive oil
1 tsp garlic, minced
1 lb chicken breast, boneless, cut into 1 inch pieces
1 tsp thyme, dried
1/2 tsp salt
1/4 tsp pepper
2 cup broccoli florets, frozen
1 cups chicken broth, light
1 tbsp cornstarch
2 cups rice, brown, whole grain

Recipe Directions for Chicken with Broccoli and Garlic Sauce

  1. Heat oil in a large skillet over medium-high heat.

  2. Place chicken on a plate and season with thyme, salt and pepper.

  3. Add garlic, saute one minute.

  4. Add chicken to skillet and cook until brown on all sides, stirring frequently, about 3 minutes.

  5. Add broccoli; cover and cook 2 minutes.

  6. Add 1 cup of broth, cover and simmer until chicken is cooked through, about 5 minutes.

  7. In a cup dissolve cornstarch in remaining 1/2 cup of broth; add to skillet.

  8. Simmer until mixture thickens, stirring constantly, about 1 minute.

  9. At the same time, cook rice.

  10. Serve over rice.
