A nice lighter version of a classic alfredo sauce.

Recipe Ingredients for Chicken and broccoli fettuccine alfredo

4 ounces light cream cheese, cut in bits
1/2 cup parmesan cheese, grated
1/2 cup light margarine
2 cups skim milk
2 tsp garlic, minced
1 salt and pepper to taste
1 cup cooked chicken, shredded
2 cups steamed broccoli florets
8 ounces fettuccine, cooked, drained

Recipe Directions for Chicken and broccoli fettuccine alfredo

  1. In a medium to large saucepan melt the margarine over medium heat.

  2. Add the cream cheese and garlic and whisk until smooth and melted.

  3. Whisk in the milk.

  4. Season with salt and pepper.

  5. Bring to a good simmer and whisk frequently until sauce thickens, around 25 minutes.

  6. Remove from heat and stir in parmesan cheese, chicken, and broccoli.
