This is a creamy casserole made of chicken and broccoli. One of my family's favorites, but definitely not a low calorie or low fat recipe.

Recipe Ingredients for Chicken Broccoli Casserole

5 lbs. chicken breast
2 1/2 lbs. broccoli
10 3/4 oz. cream of chicken soup
2/3 c. evaporated milk
1/2 c. mayonnaise
2 c. cheddar cheese (grated)
2 tbsp. lemon juice
1/3 c. bread crumbs

Recipe Directions for Chicken Broccoli Casserole

  1. Preheat oven to 350 degrees F.

  2. Bake chicken breasts and cut into bite-size pieces.

  3. Cut broccoli into bite-size pieces and parboil for 3-5 minutes. Mix together with chicken in a large casserole dish.

  4. Mix together the cream of chicken soup, evaporated milk, mayonnaise, cheese and lemon juice. Pour over top of chicken and broccoli in casserole pan. Sprinkle with bread crumbs.

  5. Bake for 30-45 minutes or until bubbly and hot.
