Easy to make. Calories are for 1/8 of recipe. Faster if you use cooked rice and rotisserie or canned chicken. Probably less salt if you use skimmed evaporated milk and fresh mushrooms.

Recipe Ingredients for Chicken Broccoli Casserole

1 T oil
1 lb. chicken fillets, skinless, boneless
1 1/2 cups water
1/4 t. paprika
1/4 t. black pepper
1 1/2 cups brown rice, uncooked
2 cups broccoli, chopped

Recipe Directions for Chicken Broccoli Casserole

  1. Brown chicken fillets in oil. Remove from skillet.

  2. Stir soup, water, paprika, pepper in skillet

  3. Heat to a boil

  4. Stir rice and broccoli into soup mixture.

  5. Reduce heat to low and return chicken to the skillet.

  6. Cover and cook for 20-30 minutes or until chicken is cooked through and rice is tender.
