Out of Mennonite Cookbook -- supposed to be just broccoli, but I added peas and green beans

Recipe Ingredients for Chicken Broccoli Casserole with Macaroni

5 oz elbows
2 tbsp minced dried onion
2 tablespoons i can't believe it's not butter
8 oz velveeta
1 cup frozen broccoli
1 cup frozen peas
1/8 cup frozen green beans
2 cups cubed, cooked chicken
1/2 tsp salt
1/2 cup eggnog
1 can cream of chicken and mushroom soup
3/4 cup grated colby jack cheese

Recipe Directions for Chicken Broccoli Casserole with Macaroni

  1. Cook macaroni according to directions. Sprinkled in minced onion and added butter (after draining water).

  2. Spoon into greased 9" X 13" backing dish. Cover with slices of velveeta. Break up uncooked broccoli and place over cheese. Cover with cubed chicken.

  3. Combine salt, milk, and soup. Pour over other ingredients. Add grated cheese.

  4. Cover and back at 375 for 30 minutes. Uncover and back 5-10 minutes longer.
