comfort food, easy for a family dinner after a long day. adapted to my preferences from the website 'ellen's impossible pies.' this is popular in my house so i make some version of it at least once a week. i cook the chicken ahead of time, and sometimes i'll double the filling and freeze the extra for later. but do not make the biscuit mix/topping mixture ahead of time, i've heard it doesn't keep well.

Recipe Ingredients for chicken broccoli bisquick casserole

1 can cream of mushroom soup
9 ounces chicken breast
1 1/2 cups broccoli
1/4 cup lowfat yogurt
1/4 cup shredded parmesan cheese
3 egg whites
2 cups reduced fat bisquick
1 3/4 cups 2% milk

Recipe Directions for chicken broccoli bisquick casserole

cook chicken (i poach mine in wine with herbs, onion and garlic). to make the filling, mix cubed chicken and finely chopped broccoli with the yogurt, condensed mushroom soup, parmesan cheese and your preferred seasonings. lately i'm partial to sage or dill, with marjoram. pour the filling into 9x13" casserole dish. in a blender, blend the egg whites, milk and biscuit mix; pour this over the chicken mixture. bake at 425 for 25 to 35 mins.
