Loosely based on a traditional greek dish. A good warm 'cold day' food. High in veggie goodness, feels bad for you without really being so.

Recipe Ingredients for Chicken and Briami

5 potatoes
1 large onion
1 large red pepper
2 cloves garlic
1 zuchinni
2 tomatoes
1/4 c grated parmesan Cheese
1/4 c Greek salad dressing
1/4 c water
1 tbsp Oregano
1 tbs Cilantro
4 bone-in unit+yield+from+1+lb+ready-to-cook+chicken chicken thighs

Recipe Directions for Chicken and Briami

  1. preheat oven to 420

  2. cut all vegetables into 1/4 inch chunks and place in arge roasting pan

  3. sprinkle with parmesan and herbs

  4. add water and salad dressing (I use a Greek feta and oregano vinegarette).

  5. toss well

  6. put uncovered into oven for 1.5 hours

  7. Remove from oven and toss

  8. Place skinned chicken on top of vegetables and return to oven for an additional hour
