Recipe Ingredients for Chicken Breasts Stuffed with Spinach and Cheese with Tomato Garlic Sauce

12 oz boneless skinless chicken breasts
1 1/2 tsp vegetable oil
1/2 tsp garlic, minced
1 medium green onion, finely chopped
1/4 cup spinach, cooked drained and chopped
1/4 cup mushrooms, diced
1/4 cup mozzarella cheese, shredded
1/4 cup chicken stock, fat free, low sodium
1 1/2 tsp margarine
1 tsp garlic, minced
1 1/2 cups diced fresh tomatoes
1/3 cup chicken stock, fat free, low sodium
1 tbsp fresh parsley

Recipe Directions for Chicken Breasts Stuffed with Spinach and Cheese with Tomato Garlic Sauce

  1. Place chicken between 2 sheets of waxed paper; pound until flattened. Set aside.

  2. In nonstick skillet, heat oil; saute garlic, onion, spinach and mushrooms until softened. Spoon evenly over breasts; sprinkle with cheese. Roll up and fasten with toothpick.

  3. Place chicken in baking dish; pour in stock. Cover and bake for 10 minutes or until chicken is no longer pink. Remove chicken to serving dish and keep warm.

  4. Sauce: Meanwhile in small saucepan, malt margarine; saute garlic for 1 minutes. Stir in tomatoes and chicken stock; cook for 3 minutes or until heated through. Add parsley and serve over chicken.

  5. Tip: if using fresh spinach, use 1 1/2 cups. Cook, drain well and chop.
