Recipe Ingredients for Chicken breasts stuffed with goat cheese artichoke and lemon

16 oz chicken fillets, skinless and boneless, raw
3 oz goat cheese
6 oz artichoke hearts
2 t lemon zest
2 T bread crumbs
1/4 t salt
1/2 t fresh ground pepper

Recipe Directions for Chicken breasts stuffed with goat cheese artichoke and lemon

  1. pound chickn breasts to 1/4 inch thick

  2. mix everything else together and roll up inside chicken, secure with toothpicks

  3. heat skillet and spray with cooking spray

  4. brown each side for three minutes and then bake in 375 degree oven another 15-20 minutes until done. (Easier if use same skillet)
