Recipe Ingredients for Chicken Breasts with Mustard Persillade

1 pound (4) boneless chicken breasts
1/2 cup Dijon mustard

Persillade:
4 cloves garlic, minced
2 cups (4 slices) fresh bread crumbs
1/2 cup margarine or butter
2/3 cup chopped fresh parsley
1 salt and pepper to taste

Recipe Directions for Chicken Breasts with Mustard Persillade

  1. For persillade: Saute garlice and bread crumbs in margarine. Add parsley and mix well. Cool crumb mixture. Brush chicken breasts liberally with mustard. dip into persillade and press crumbs into chicken on both sides. Bake in a 9 x 13-inch pan, uncovered, at 425 degrees for 20 to 25 minutes until juices run clear and top is deep brown.

  2. Note: Combining the garlic and bread in a food processor makes easy work of this dish.
