I skipped the flouring the chicken and used chicken broth instead of olive oil..it tasted fine.

Recipe Ingredients for CHICKEN BREASTS WITH LEMON AND CAPERS

1/2 tsp. Black pepper
1 tsp. Paprika
1 1/2 lbs. chicken breasts, skinned, pound thinly
2 tbsp. Chicken broth
6 tbsp. lemon juice
8 ounces capers, drained

Recipe Directions for CHICKEN BREASTS WITH LEMON AND CAPERS

  1. If you like, then dredge chicken in flour mixture, shake off excess. (I did not do)

  2. Add chicken to hot oil. Cook 3 minutes on each side. Don't overcook. Transfer to warm plate.

  3. Add chicken broth, lemon juice and capers. Heat through (a bit of cornstarch will add consistency if desired). Pour over chicken.
