Also needs 2 T brandy, but search would not find it. Tip: You can pound chicken breasts flat and leave flattened between sheets of plastic wrap. Wrap them airtight in one package and freeze for later use.

Recipe Ingredients for Chicken Breasts Diane

2 chicken breast, large/halved
1/2 t salt
1/4 black pepper
2 T olive oil
2 T butter
3 T chives or green onions, chopped
2 T lime juice (of 1/2 lime or lemon
3 T parsley, chopped
2 t mustard, dijon
1/4 cup chicken broth

Recipe Directions for Chicken Breasts Diane

  1. Place chicken breast halves between sheets of waxed paper or plastic wrap.

  2. Pound slightly with mallet.

  3. Sprinkle with salt and black pepper, set aside

  4. Heat 1 T each of oil and butter in skillet

  5. cook chicken over high heat for 3 minutes on each side.

  6. Do not overcook or they will be dry.

  7. Transfer to warm serving platter.

  8. Add chives or green onion, lime or lemon juice, and brandy, parsley, mustard to pan.

  9. Cook 15 seconds, whisking constantly.

  10. Whisk in broth. Stir until sauce is smooth.

  11. Whisk in remaining oil and butter.

  12. Pour sauce over chicken. Serve immediately.
