Chicken Chasseur over pasta or rice

Recipe Ingredients for Chicken Breasts Chasseur

24 ounce skinless boneless chicken breasts
2 tsp olive oil
1/3 cup chopped carrot
1/2 cup chopped onion
2 cups veal stock
2 cups sliced mushrooms
1/8 cup chopped shallots
1 oz cognac
1/2 cup white wine
2 tbsp chopped basil

Recipe Directions for Chicken Breasts Chasseur

  1. Pound Chicken Breasts, 1/3 inch and season with Salt and Pepper

  2. Brown Chicken in 1 tbsp olive oil 2 minutes each side then transfer to a platter to a 325 degree oven for 15 minutes

  3. Add carrots and onions to pan sauting over medium heat until soft and carmalized. Add stock bringing to a fast simmer and reduce 1/2.

  4. In a seperate pan saute shallots in 1 tbsp olive oil 1 minute then add mushrooms until golden.

  5. Remove from heat, add cognac, flambe' burning off alcohol.

  6. Add white wine and saute 8 minutes reducing liquid

  7. Add mushrooms to stock and simmer until thickened

  8. Spoon over chicken and pasta/rice
