Recipe Ingredients for Chicken Breasts in Basalmic Vinegar Sun Dried Tomato Sauce

6 pieces (aka halves) skinless, bone-in chicken breasts
1 1/2 cups leeks
1 1/2 tsp fennel seeds
2 tbs tomato paste
1/4 cup basalmic vinegar
1 cup chicken broth
1 cup sun dried tomatoes
1/4 cup fresh basil
2 clove garlic (cook whole head, but squeeze 1-2 cloves into sauce when done)

Recipe Directions for Chicken Breasts in Basalmic Vinegar Sun Dried Tomato Sauce

  1. Cook leeks, fennel seeds in a small amount of the broth, in the pot of your pressure cooker, until leeks softened.

  2. Add vinegar and tomato paste, cook until syrupy- about 20 seconds.

  3. Immediately add remianing broth.

  4. Add chicken pieces, sun dried tomatoes, and head of garlic (remove papery outer skin). Spoon sauce over chicken (could temporarily remove sauce before putting chicken in).

  5. Lock lid in place, bring to high pressure and cook about 8 minutes. Allow to fall naturally about 4 minutes, then release any remaining pressure.

  6. Remove garlic head, but for garlicyness squeeze 1 or 2 cloves into sauce.

  7. Puree part or all of sauce with immersion blender.

  8. Season with fresh basil, lemon zest, salt, pepper.
