Recipe Ingredients for Chicken Breasts with Artichokes and Mushrooms

2 pounds skinless, boneless chicken
1 onion powder to taste
1 paprika to taste
1 salt to taste
1 pepper to taste
14 ounce artichoke hearts, drained and quartered
1/2 pound fresh mushrooms, sliced
4 oz green onions, chopped
1/2 teaspoon garlic, minced
2 tablespoons margarine
2 tablespoons all-purpose flour
2/3 cup fat-free chicken broth
3 tablespoons sherry wine

Recipe Directions for Chicken Breasts with Artichokes and Mushrooms

  1. Preheat the oven to 350F.

  2. Season the chicken heavily with the onion powder, paprika, slat, and pepper. Place the checken in the bottom of a 3-quart casserole dish coated with nonstick cooking spray. Place the artichoke hearts around the chicken.

  3. In a medium skillet coated with nonstick cooking spray, saute the mushrooms, green onions, and garlick until tender. Place the mushroom mixture on top of the chicken.

  4. In the same skillet, melt the margarine, and add the flour, stirring. Gradually add the chicken broth and sherry, cooking until smooth and the sauce comes to a boil. Pour the sauce over all in the casserole.

  5. Bake, covered, for 1 hour. Remove the cover, and continue baking for 15 minutes to brown the chicken. Serve.
