Sliced grilled chicken breasts served over Rotini with roasted red peppers and spinach

Recipe Ingredients for Chicken Breast over Roasted Red Pepper Rotini

20 oz boneless skinless chicken breasts
13 1/4 oz whole wheat rotini
12 oz roasted red peppers, sliced
4 cups fresh baby spinach
1 cup Caesar Dressing
2 tbsp shredded Parmesan cheese
1 tsp salt
1 tsp fresh ground pepper

Recipe Directions for Chicken Breast over Roasted Red Pepper Rotini

  1. Grill chicken breasts for 6-7 minutes each side, then slice into strips.

  2. Cook pasta uncovered in 5 quarts of boiling water for 13-16 minutes. Drain.

  3. Toss cooked pasta in lightly oiled pan with red peppers and spinach for about 1 minute.

  4. Add Caesar dressing and stir frequently until heated (3-5 minutes).

  5. Place mixture in serving dish and top with Parmesan, salt, and pepper.

  6. Place chicken strips over mixture.

  7. Serve hot.
