Patties can be easily made ahead and then warmed in microwave. I usually eat them with some grilled veggies or fresh fruit.

Recipe Ingredients for Chicken breakfast sausage

1 lb ground chicken breast
1/2 cup onion, grated
3 T pecans, chopped
1 T chili powder
1 egg

Recipe Directions for Chicken breakfast sausage

  1. Mix everything together with your hands.

  2. Form into 8 patties.

  3. Spray skillet with cooking oil and fry 4-5 minutes on each side until no longer pink in middle.

  4. Cool completely before storing.
