Chicken & Bow-Tie Pasta Recipe

My version of the dish at the Weathervane at Southern Seasons in Chapel Hill, NC.

Recipe Ingredients for Chicken & Bow-tie Pasta

16 oz dry farfalle
56 oz canned diced tomatoes
4 oz grilled chicken breast strips
3 T fresh basil, chopped
2 t balsamic vinegar
1 lb asparagus, cut into 2-inch pieces
2 T extra-virgin olive oil
1/4 c toasted pine nuts
3 oz goat cheese
2 cloves garlic, minced

Recipe Directions for Chicken & Bow-tie Pasta

  1. Cook pasta according to package directions for al-dente.

  2. Add oil to med-high skillet. Saute garlic, add asparagus and saute for 3 min. Add chicken and tomatoes and simmer for 10 minutes or until asparagus is tender, but not over-cooked. Add balsamic vinegar and basil. Season to taste.

  3. Add cooked pasta and toss with pine nuts. Crumble goat cheese and sprinkle over top. Serve.
