Recipe Ingredients for Chicken Bok Choy Stir Fry

1 1/2 tablespoons cornstarch
3/4 cup chicken broth
3 tablespoons lemon juice
2 tablespoons low sodium soy sauce
2 tablespoons honey
1 teaspoon ground ginger
1 pound boneless skinless chicken breasts, approx 4
1 teaspoon olive oil
1 1/4 cup sweet red pepper, chopped to 1" squares
1 pound bok choy, chopped to 2" pieces

Recipe Directions for Chicken Bok Choy Stir Fry

  1. Stir broth, cornstarch, lemon, soy, honey, & ginger til smooth - set aside

  2. Cut chicken crosswise into 1/2" strips

  3. Put pan over high heat, when hot add oil & chkn

  4. Stir til no longer pink (2-3 mins) lift out & cover

  5. To pan add veggies & 2 tbs H2O & cover tightly & cook til tender/crisp (1 1/2 - 2 mins) Lift out & set aside

  6. Stir broth mix & add to pan for approx 1 min, add chicken & veggies.

  7. May serve over rice
