Single serving quick stir fry with bok choy -- high in sodium though.

Recipe Ingredients for Chicken / Bok Choy Stir Fry

3 oz chicken
10 oz bok choy
1 tsp canola oil
2 tbsp soy sauce
1 tsp sugar

Recipe Directions for Chicken / Bok Choy Stir Fry

  1. Mix soy sauce and sugar together (add ginger, optional) and marinate sliced chicken in mixture for 10 minutes minumum (no more than 1 hour max).

  2. Drain chicken, set aside marinade.

  3. Heat half of canola oil in wok. Cook chicken over medium high heat. Remove from pan and set aside.

  4. Wash and cut bok choy (separate stems from leaves).

  5. Wash pan, add half canola oil and heat over medium high heat. Add bok choy stems and cook for 2-3 minutes. Add meat, bok choy leaves and cook for 1-2 minute. Add garlic in last -- don't burn.
