The combination of blue cheese, spinach and chicken make these stuffed potatoes a unique one dish meal.

Recipe Ingredients for Chicken Blue Cheese Stuffed Potatoes

6 russet potatoes
1/2 lb boneless skinless chicken breast, chopped in 1.4 inch pieces
1/2 tsp sea salt
1/4 tsp black pepper
2 tsp olive oil
3 oz baby spinach
1/2 small onion
1/4 cup blue cheese
2 tbsp low fat cream cheese
1 tsp fresh lemon juice

Recipe Directions for Chicken Blue Cheese Stuffed Potatoes

  1. Preheat oven to 400. Poke holes in potatoes, wrap separately in foil and bake until tender. Let cook at least 15 minutes.

  2. Heat oil in large skillet, add chicken and cook until no pink remains. Remove from skillet.

  3. Add spinach and oinion to same skillet and saute over medium heat until spinach is wilted; set aside.

  4. Cut potatoes in half lengthwise. Carefully scoop out centers, leaving 1/4 inch thick shells.

  5. In large mixing bowl, mash potato meat, set aside.

  6. Stire chicken and spinach mixture into potato meat. Add blue cheese, cream cheese, lemon juice and salt. Mix well, use hands if necessary.

  7. Spoon mixture into potato shells, dividing equally, Place potatoes on baking sheet, bake for 10 - 15 minutes at 400F until lightly browned and thoroughly heated.
