Chicken blue cheese stuffed potato

Recipe Ingredients for Chicken blue cheese stuffed potato

28 oz potato, 2 baking potatoes
2 tbls olive oil
6 oz chicken breast, 3 oz spinach, (1 1/2 cups)
1/4 cup onion, diced
1/4 cup blue cheese, low fat & crumbled
2 tbls cream cheese
1 tsp lemon juice
1/4 tsp salt

Recipe Directions for Chicken blue cheese stuffed potato

  1. Bake potatos at 400deg for 45 minutes untill they are tender. Heat oil in medium skillet over medium hi heat. Season chicken with Greek seasoning and cook untill tender 5-7 minutes. Remove chicken and set aside, cut ito 1/4" pieces.

  2. Add onion and sautee till tender add spinach and sautee till spinach looks wilted. Remove from heeat and set aside.

  3. Cut potatoes in half length wise. Scoop out center leaving 1/4 " thick shell. In lg. bowl mash scooped out potato and set aside. Stir chicken, onion,spinach into mashed potato mix. Add Blue cheese, cream cheese and lemon juice, season with salt and pepper, stir well. Spoon mixture into potato shells dividing equally and place potatoe shells cut side up on baking pan misted with cooking spray.

  4. Bake at 400 deg F for 10 to 15 minutes or untill lightly browned and thoroughly heated.
