Recipe Ingredients for Chicken with black beans and rice

2 cup,+chopped+or+diced chicken breasts
1/4 cup rice flour
2 tsp chili powder
1/4 tsp sea salt
1/2 tsp black pepper
2 tbs. olive oil
30 oz. black beans, drained and rinsed
14 1/2 oz diced tomatoes
1 cup frozen corn
1 cup water
2/3 cup brown rice, uncooked
1/2 onion, chopped
1/2 tsp cayenne pepper
1 clove garlic, minced

Recipe Directions for Chicken with black beans and rice

  1. In a large resealable plastic bag combine flour, chili powder, the salt, and pepper.

  2. Cut chicken to uniform size pieces.

  3. Add chicken pieces, half at a time. Seal bag; shake to coat.

  4. In a very large skillet brown chicken on all sides in hot oil over medium heat, turning occasionally. Remove chicken from skillet and set aside; discard drippings. Add beans, undrained tomatoes, corn, uncooked rice, cayenne pepper, and garlic to the skillet. Bring to boiling. Transfer rice mixture to a 13x9x2-inch baking dish or 3-quart rectangular casserole. Arrange chicken pieces on top of rice mixture.

  5. Bake, covered, in a 375 degrees F oven for 25 to 30 minutes or until chicken is no longer pink and rice is tender. Makes 6 servings.
