Just a total on the fly experiment based on whole food cooking and what I had in the fridge and cabinets!

Recipe Ingredients for Chicken, Black Bean & Veg Polenta

5 oz spinach
1 small onion
2 tablespoon minced garlic
1 cup diced bell peppers
15 oz of whole kernel corn
15 oz of black beans
4 oz of bacon
1 1/2 lbs chicken
16 oz polenta
1 tablespoon extra virgin olive oil

Recipe Directions for Chicken, Black Bean & Veg Polenta

  1. For this recipe I heated a cast iron frying pan and a flat cast iron griddle and lightly sprayed them with lemon EVOO.

  2. On the skillet I fried slices of Melissa's Organic Polenta to a crisp and as they were finished I placed them on cookie rack so they remain crisp.

  3. Slice bacon into thin strips and fry them in the cast iron frying pan, when almost cooked through, toss in onions, garlic, and mixed tricolor peppers. As the veggies soften toss in whole spinach, drained and rinsed low sodium black beans and whole corn kernels.

  4. Mix well and then add leftover baked chicken tenderloin strips that have been tossed in your favorite Mexican spices. Cover, reduce heat to low and allow spinach to wilt and chicken to reheat.

  5. Serve with Polenta slices on a plate and top with chicken and veggie mixture. ENJOY!
