Recipe Ingredients for Chicken Black Bean and Spinach Enchiladas

10 whole wheat tortillas, 6-inch
15 oz can black beans
1 1/4 lbs chicken breast
1/2 cup green onion
3/4 cup reduced fat cheddar cheese
2 tsp chili powder
1 tsp cumin
10 oz frozen spinach
1/2 cup enchilada sauce

Recipe Directions for Chicken Black Bean and Spinach Enchiladas

Combine spices and toss with sliced chicken. Coat a skillet with non-stick spray. Cook chicken through. Remove from heat. Toss with black beans (drained and rinsed), spinach and green onion. Sprinkle a tablespoon of shredded cheese and 1/4 cup of chicken mixture into each tortilla. Roll up and place in baking dish, seem side down. Repeat. Spoon enchilada sauce over the top. Bake at 350 for 25 minutes.
